Marques Tone

Marques Tone is has over 15 years of experience in top global restaurants and hotels. Born in India, he has worked in culinary hubs like London, Mumbai, and Dubai. Tone holds a bachelor’s degree in Hotel & Tourism Management Studies and a postgraduate diploma in Culinary Arts from West London College. He started his career at Gordon Ramsay’s restaurant in London and moved to Dubai in 2010, where he held senior positions in prestigious fine-dining establishments. Skilled in French, Japanese, and Peruvian cuisines, he joined COYA Dubai as Junior Sous Chef in 2014, quickly excelling in Peruvian cuisine. After gaining additional experience in Dubai's elite restaurants, Tone returned to COYA Dubai in January 2023 as Head Chef. He focuses on nurturing his kitchen team, creating unique dining experiences, and enhancing COYA’s menu. Under his leadership, COYA Dubai has secured a spot in the Gault&Millau UAE Guide and aims to climb higher on MENA’s 50 Best Restaurants list.
