Shaunne Cordier

Hailing from Johannesburg, Chef Shaunne Cordier has spent 20 years refining his culinary expertise across an array of renowned restaurants in both the UAE and South Africa. Chef Shaunne started his culinary career in his hometown Johannesburg, before gaining further experience across famed 5-star Game Lodges and Hotels in South Africa, including Sabie Sands Game Reserve, Pumba Game Reserve and Highgrove Country House. This led him to being appointed as Snr Sous Chef at The Roundhouse Restaurant, which is internationally recognized as one of Cape Town’s top 5 fine dining restaurants. As a result of his innovative cooking techniques and experience gained by working closely with South African Olympic Chefs, in 2010 Chef Shaunne became a member of the Confrérie de la Chaîne des Rôtisseurs, Association Mondiale de la Gastronomie and was recognized as part of the prestigious L’Ordre Mondial des Gourmets Dégustateurs. In 2016, the talented Chef landed in the UAE, and began his new chapter as Chef De Cuisine at The Foundry Restaurant in Abu Dhabi for 1 year, followed by taking on a Sous Chef position at Southern Sun Hotel Abu Dhabi. He then moved to a new role as Senior Sous Chef for the Gates Hospitality group, before being appointed as Culinary Events Executive for Lafayette Gourmet Events. During this time, Chef Shaunne showcased his in-depth understanding of French cooking techniques with an emphasis on using the very best produce and tried-and-true techniques. In 2018, Chef Shaunne was appointed as CASSETTE’s Executive Chef where he played an integral part of the opening team, developing the menu and concept from scratch whilst also training the team. Since then, he leads on the culinary charge of CASSETTE, and continues to capture the genuine essence of the venue’s French origins in a fresh and creative way, offering a bistro experience that serves Modern Parisian cuisine with an international twist. In addition, Chef Shaunne has been the Executive Chef of NETTE since its opening in January 2022. The menu celebrates the best of both French and Japanese cuisine, where flavours such as yuzu, soya, and umami are showcased throughout each dish. From a quick lunch after a mid-morning yoga class or well-earned dinner following a game of padel, NETTE’s dishes are as delicious as they are nourishing, and include gluten-free, vegan, keto and dairy free dishes with a modern flair – perfect for a stylish, casual café setting.
