Thomas Domingues

Thomas Domingues has been the Head Sommelier at Ossiano, Atlantis, The Palm since May 2023, bringing a unique approach to wine that emphasizes storytelling. Originating from the south coast of Portugal with French heritage, Thomas honed his skills at Michelin-starred restaurants, including Vila Joya, AOC in Denmark, and Belcanto in Portugal. Since joining Ossiano, he has expanded the wine list from 500 to 1,200 labels and developed an exceptional wine pairing program. His focus on small boutique producers and diverse vintages has earned Ossiano accolades such as the Best Selection by the Glass and Best Austrian Wine Selection at the Star Wine List ceremony.
