Hereditary chef from Romania mixes top-notch Japanese products with French techniques, with an emphasis on sauces and unexpected pairings, such as adding kimchi cabbage granita or champagne emulsion to sushi. In addition to the omakase set that’s accessible by Dubai standards (1,200 Dhs without alcohol), there is a la carte menu as well. Every Wednesday, the gastro bar hosts thematic dinners – with vague beef and Japanese whiskey.
